5 minutes with... Our interview with Bianka & Daniel Schmitt

Bianka and Daniel's journey began in 2012. For them, working close to nature was not and is not enough: They want to work with nature and believe that everyone has a place in this ecosystem. You just have to find it. The result? Great wines that reflect their personalities and visions.

8gb: Hello dear Bianka, hello dear Daniel! Thank you for taking the time to answer a few questions about you and your wines! For those who don't know your wines yet, what makes them so special in your eyes?

Bianka+Daniel: "Hello dear people! 😊 The special thing is the general situation that, as a winemaker, you can work 100% according to your own philosophy. So we can let off steam and give free rein to our creativity!"

8gb: Was it always natural for you to produce natural wine, or how did it come about?

B+D: "We can call it "natural wine" or simply "wine". We enjoy the freedom and our time, and use the opportunities to make wine that suits our philosophy and taste. We met in 2012, and just as there was a spark between us from the beginning, we were suddenly overtaken by each other's ideas and thoughts. That's just what happens when you get along, no matter what your relationship is."

"Through our experience with several sources, it was natural for us from the beginning, to work with nature and not "close to nature"! It is a constant cooperation between nature and winemakers, at a magnitude that we must be aware of, because our ecosystem is also quite easy to destroy. Therefore, it is also our task to support this system as attentively and consciously as possible. So, back to the question: of course!"

It's all about pairing!

8gb: What do you like to eat with your wines? Which pairings do you like?

B+D: "The always fitting and best solution for us is butter & bread! The quality of the butter and the bread must be right."

8gb: What is one of the biggest life lessons you've learned so far since making your own wines?

B+D: "To stay true to your path and trust your intuition. To pay attention to people and be prepared for headwinds. To be able to learn from critiques."

8gb: Can you remember your first experience with natural wine?

B:Yes, when Daniel asked me in September 2012 at Patrick Meyer's farm if I would stay with him in Germany .

8gb: If you had the opportunity to start all over again today, would you do anything differently?

B+D: "No. We are grateful for everything we have experienced, whether negative or positive. That has shaped us."

Always versatile

8gb: What is the most beautiful thing for you in the whole winemaking process?

B+D: "The most beautiful thing is to be able to constantly accompany this varied process. With all its consequences and its diversity. To observe and perceive the developments of nature and later of the wine."

8gb: What can we expect from you in the future?

B+D: "Unfortunately, we cannot promise you that we will be able to meet any expectations in the future. What is certain, however, is that we will gladly continue to remain true to our work and quality!"
