Kohlrabi Schnitzel & Grüner Veltliner from Nibiru

I have once again thrown myself into the cooking apron for you and searched for the best combination to the Grüner Veltliner from Nibiru. Trust me, the pairing is quite, quite wonderful! The crispy crust and the crunchy apple in the wine - you can only dream of that!

You need (for 2 people):

  • 1/2 kohlrabi
  • 30g flour
  • 1 egg
  • 40g crumbs
  • 400g potato
  • 1/2 cucumber
  • 3EL apple cider vinegar
  • 3EL olive oil
  • 1 tsp Dijon mustard
  • 3-4EL clarified butter/oil for frying
  • 1-2EL cranberry jam
  • A dash of maple syrup
  • A dash of (oat) milk
  • Parsley
  • Salt & Pepper

Oh, and ...

Of course, a bottle Grüner Veltliner of Nibiru, #essentials!

Step 1: Prep the veg!

Boil potatoes in salted water until tender. Then strain and leave to cool.

Peel the kohlrabi and cut slices about 1 cm thick. 2 slices per person is a good amount. Cook the slices in boiling water for 3-5 minutes until they are slightly softer.

Step 2: Dressing & Salad

Finely chop the parsley. In a large bowl, mix apple cider vinegar, olive oil, parsley, salt, pepper and a dash of maple syrup and season to taste. Peel and thinly slice the potatoes. Then add directly to the bowl with the dressing. Thinly slice/grate half the cucumber as well and mix everything together. Then set aside and let it soak in.

Step 3: Schnitzel in the making

Put flour, egg and breadcrumbs each in a separate bowl. Add a dash of milk, salt & pepper to the egg and mix well. Now turn the kohlrabi slices first in the flour, then in the egg and then in the breadcrumbs until they are completely covered by all three ingredients.

Step 4: Sauté kohlrabi

For the ultimate Austrian version, heat the clarified butter or otherwise the oil in a pan. Approximately so that there is 1cm of oil/lard in the pan. On not too high heat, fry the kohlrabi cutlets until golden brown. Then drain on a paper towel.

Pair it, baby!

Arrange on the plate together with the salad, add the cranberry jam on top. Then all you need is a generous glass of Grundstein Grüner Veltliner from Nibiru and you can enjoy your own masterpiece.
